What can I say, my number one chef. And the last time I'll eat here. Since he's going to Amsterdam and turn this place into a fish restaurant. So I'll be back and of course in Amsterdam (currently Sophia).

This time it was for lunch ... 'only 4 course lunch ...' :-)

Amuse
Hollandse garnalen (van Aart Schouten) gemarineerd met soya en bosui
Hoorntje Amsterdams ui en spiering
Pommes souffle met dragon mayonaise
Eitje mango ganzelever met kummel zaadjes
Pofferte spekbokking aardappel cremefraiche

geserveerd met heerlijk vers gebakken brood en boter van de Lindenhoff

Rauwe makreel
kroepoek van rode biet
Loempia van makreel
Marhmellow rode biet wasabi

Coquille
Bloemkool met een creme van bloemkool
Buikspek
Beurre Blanc saus

Kipoester
Kalfszwezerik
Verschillende soorten ui
Jus de veau op vinaigrette basis
Creme courgette

Dessert
Zuurzak (familie van de peer)
Peer
Creme chocolade
cakje van chocolade

Sinaasappel specerijen en schuim van gluhwein
Huisgemaakte stroopwafel


Cafe friandises (bittergarnituur stijl)
Bitterbal (chocolade)
Kaas (witte chocolade met passievrucht)
Chorizo worst (gedroogde aardbei)



Like his diners, lot of detail but not too much. Rich flavors and more than enough. It was once again a stunning lunch. Never one disappointment here. Iwould like to say, Amsterdam here we come ... of course we will try Ouderkerk for the Fish too ...

And didn't he meat one of his all time examples ... Alain Ducasse. And I had the nice opportunity to be invited in march 2008 to eat in Spoon - Paris. What a feast that was as well ...
